Woke up craving my Avocado Egg Salad so here we are 😋 I feel like egg salad doesn’t get the credit it deserves, generally speaking. I think more people should be eating it and talking about it. Especially when it has bacon on top !!! It’s so damn good and truly the perfect weekday lunch 👌🏼🥚 Spread the word.

Instructions

Place 6 eggs in a large pot and fill with cold water to cover by at least an inch. Bring to a boil, cover and remove from heat.

After 10 minutes, place the eggs in an ice bath for an additional 10 minutes to cool and stop the cooking process.

Peel the eggs and mash them in a large bowl with the avocado. Add in remaining ingredients and combine with a fork. Season to taste.
