These insane BBQ Chicken Nachos are a party favorite, inspired by BBQ Chicken Pizza but in an easy-to-make nacho form. This lighter version is prepared on a sheet pan for minimal cleanup, perfect for gatherings or Super Bowl apps.
Preheat oven to 350 degrees F (175 C) and line a baking sheet with parchment paper or foil.
Heat a skillet to medium heat and add a drizzle of olive oil. Season your chicken breasts with salt and pepper and add to the pan. Cook for about 5 minutes each side or until chicken is cooked through. Shred the chicken with two forks and coat with 1 cup of BBQ sauce.
Add half the bag of tortilla chips to the prepared baking sheet, then top with half the shredded Mexican cheese. Add remaining chips and cheese, then top with your shredded BBQ chicken.
Bake for 10-15 minutes or until the cheese is melted and bubbly.
Top with a drizzle of Greek yogurt (thinned with 1-2 tbsp water if using), 2 tablespoons of BBQ sauce, diced red onion, chopped green onion, diced Roma tomatoes, and sliced jalapeños (if using). Dive on in!
