Berry Cheesecake Bites

For the crust: Pulse 1 1/2 cups of your favorite granola and 2-3 tablespoons coconut oil in a food processor or blender until a bread crumb-like consistency is formed. Press a thin layer into a cupcake tin (or use a loaf pan for bars) and freeze while you make the "cheesecake."

For the "cheesecake": Blend together 1 1/2 cups cashews (soaked in warm water for 30 minutes to 3 hours), 2 dates (soaked in hot water for 10 minutes), juice and zest from 1 small lemon, 1/4 cup unsweetened almond milk, 1/4 cup coconut butter, 1 tsp vanilla extract, and about 1 cup of fresh berries. Blend everything until it’s smooth and fluffy! Spoon the mixture on top of the crust and freeze for at least one hour. Let thaw for 10 minutes before serving.
