These Chicken Lettuce Wraps with Peanut Sauce are a healthy, flavor-packed option perfect for a weeknight meal. They easily incorporate a ton of hidden veggies and are promised to become a household staple.
1. In a large pan over medium heat, saute minced garlic, ginger, chopped stir fry veggies, and cauliflower rice in a drizzle of oil until veggies start to soften.
2. Add ground lean chicken to the pan and season with a dash of black pepper and garlic powder. Cook until chicken is done.
3. While the chicken cooks, prepare the peanut sauce: Combine peanut butter, soy sauce, rice wine vinegar, minced garlic clove, juice from 1/2 lime, honey, and optional sriracha or sambal in a bowl.
4. Add water to the peanut sauce 1 tablespoon at a time, mixing until you achieve your desired consistency.
5. Once the chicken is cooked, add 3 tablespoons of soy sauce. You may need to drain out any excess water from the pan beforehand.
6. Serve the chicken mixture on top of lettuce cups (Butter, Iceberg, or Romaine). Top with fresh lime wedges, green onion, and a generous drizzle of peanut sauce. For extra crunch, add crunchy sesame sticks.
