This recipe recreates the popular Thai Chicken Satay with Peanut Sauce at home, noted for being very substitute-friendly and yielding amazing results. It's an easy and healthy dish that can be enjoyed with good quality kitchen items.
Cut your chicken thighs into bite size pieces and marinate in the Chicken Satay Marinade (sriracha, sesame oil, 1 tbsp red curry paste, 1 tbsp soy sauce, turmeric, fish sauce, fresh grated ginger) for 30 minutes or up to 24 hours. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. Add 4-5 pieces of chicken to each skewer and bake for 20 minutes or until cooked through. While the chicken bakes, combine all Peanut Sauce ingredients (peanut butter, crushed peanuts, minced garlic, lime juice, 1 tsp red curry paste, 1 tbsp soy sauce, honey, 0.5 tsp sriracha). Place your skewers on a cooling rack and brush with additional peanut sauce. Serve with cilantro, diced red peppers, and a side of peanut sauce over white rice.
