Chipotle Copycat Chicken Avocado Tacos

To make the marinade, combine 2 tbsp avocado oil, 1 tbsp white vinegar, 2 tbsp chopped cilantro, 1/2 of a small diced jalapeño, juice from 1 lime, 1 tbsp chili powder, 1/2 tsp cumin, 1/4 tsp oregano, salt, and pepper. Marinate 1 lb of chicken breast or thighs in this mixture for 30 minutes to 24 hours. Cook the chicken using your preferred method; for example, sous vide at 150 degrees F for an hour, then pan-sear to get a crisp. Alternatively, pan-sear, grill, or bake until cooked through. Heat your tortillas for a few seconds on each side. To assemble the tacos, add shredded cheese, sautéed fajita veggies (such as red bell pepper and white onion), diced cooked chicken, avocado, Greek yogurt, pico de Gallo, and fresh cilantro to the heated tortillas.
