This recipe is a homemade version of the Taco Bell Mexican Pizza, shared after the popular item was removed from the menu. It promises a better version than what was recently served by the fast-food chain.
Start by cooking your meat (can omit to make vegetarian). Cook about 1 lb of ground beef or turkey in 1 tbsp avocado oil over medium heat. Add in taco seasoning according to package directions. Break up the meat well with a wooden spoon.
While the meat cooks, heat a skillet over medium heat and spray with avocado oil spray. Once it’s hot, add your tortilla. Cook for about a minute on each side or until they get crispy (you will need 2 tortillas per Mexican pizza).
Spread fat-free refried beans evenly over your crispy tortilla then top with your taco meat. Add another tortilla on top, spread evenly with red enchilada sauce, sprinkle some Mexican cheese over the sauce and add a small handful of chopped Roma tomatoes.
Broil for about 2-3 minutes until the cheese is melted. Top with fresh green onion, Greek yogurt or sour cream, and hot sauce.
