Creamy Dreamy Cauliflower Alfredo Sauce

Start by sautéing 1 white onion in 2 tbsp ghee, butter or olive oil over low/medium heat. They should get soft and caramelized after about 20 minutes. Add in 6 cloves of garlic (they can be whole - we are blending it later!) and sauté for another 5 minutes until fragrant. Add to a blender with 5 cups of steamed cauliflower florets, 1/2 cup milk (almond or regular works), 1 cup vegetable broth, 2 tbsp lemon juice and 1 tsp of salt, pepper, oregano and red chili flakes (optional). Blend until smooth and add more liquid depending on how thick you want it. Pour over your favorite pasta and season to taste. You can add lemon pepper, more salt and top with red chili flakes and a little Parmesan cheese.
