Deli-Style Turkey Sub with Sweet Pepper Relish

For the relish, add all ingredients to a sauce pan and bring to a boil. Reduce heat to medium low and simmer for 30 minutes or until liquid is absorbed. Store in the fridge.​
Whisk together all ingredients for the oil + vinegar mixture. Set aside.​
Assemble your sub. Slice the bread lengthwise. Spread the mayo, mustard and add pepper relish. Next add the salami and turkey, then top with tomatoes and avocado. Add the lettuce to the other side and evenly spread the iceberg lettuce across the top. Drizzle with the red wine vinaigrette, then season with salt and pepper. Slice in half or in fourths and serve.
