EASY Skillet Chicken 🤝 Superfood Chopped Salad

Cut chicken breast in half longways to make it thinner. Cover with parchment paper or plastic wrap and pound until it is equal thickness (I used a cup). Season both sides of the chicken. Heat a skillet over medium heat. Add a drizzle of oil then add the chicken. Cook for 2-3 minutes each side until cooked through. Let it rest then slice and serve on the chopped salad with a squeeze of lemon!
