Fall Harvest Bowl with Maple Sage Dressing
20 mins prepServes 2
The perfect transition meal from summer to fall. This Fall Harvest Bowl features a delightful Maple Sage Dressing, mixed greens, quinoa, protein, cheese, apple, roasted sweet potato or butternut squash, and walnuts.
For the Maple Sage Dressing: Blend together all ingredients (olive oil, apple cider vinegar, sage leaves, garlic clove, dijon mustard, maple syrup, red chili flakes, salt, and pepper). Alternatively, finely mince the sage and garlic then shake it up in a mason jar or small container with a lid.
For the Roasted Sweet Potatoes (or butternut squash): Preheat oven to 400°F (200°C). Coat the sweet potatoes in avocado oil and season with salt and pepper. Bake for about 20 minutes.
To Assemble the Fall Harvest Bowl: Layer mixed greens or kale, cooked quinoa, your choice of rotisserie chicken or chickpeas, shredded white cheddar, sliced honeycrisp apple, roasted sweet potato or butternut squash, and walnuts. Add dressing to the greens first, and then drizzle more over the assembled salad.
