French Toast Pancakes

First, prepare pancakes according to the package directions for your chosen pancake mix. This recipe is designed for about 6-7 pancakes. In a shallow, large dish (like a pie pan), whisk together 1 egg, 1/4 cup milk (almond milk was used here), 1/2 teaspoon cinnamon, and 1/4 teaspoon vanilla. Once your pancakes are ready, coat each pancake thoroughly in this mixture.
