Healthy Fridge Clean Out Mash

Start by microwaving or baking your sweet potatoes until soft. Heat up a large saucepan over medium heat and add avocado oil. Sauté onions and garlic until fragrant (about 5 minutes). Add in your veggies and chicken sausage and sauté until veggies are soft (5-7 minutes). Add in your steamed sweet potatoes (skins removed) and mash together. Add in Greek yogurt (or a drizzle of olive oil and shredded mozzarella if skipping yogurt) and season to taste with salt, pepper, and onion salt. Optionally, add some vegan chicken-less seasoning. Top with fresh thyme, crushed Calabrian chili peppers, and grated Parmesan for added flavor.
