A simple and quick side dish featuring Israeli (or pearl) cous cous, cooked and then tossed with freshly shaved Pecorino or Parmesan cheese, fresh cracked pepper, salt, and parsley. This recipe is for a side serving.
Cook 1.5 cups of Israeli (or pearl) cous cous in 3 cups of water. Bring the water to a boil, then reduce heat and let it simmer until all the water is absorbed. Once cooked, add freshly shaved Pecorino cheese (Parmesan works too), a dash of fresh cracked pepper, a dash of salt, and fresh parsley. Serve immediately, garnished with more cheese, pepper, and parsley if desired.
