Italian Pasta Salad

Cook your favorite pasta and cheese tortellini according to their package directions. Once cooked, drain and place them in the fridge to cool completely. While the pasta cools, prepare the rest of the salad ingredients by chopping all the vegetables, cheese, and salami really well. In a large bowl, combine the cooled pasta and tortellini with the chopped red bell pepper, orange bell pepper, halved cherry tomatoes, spinach, minced red onion, marinated artichoke hearts, cubed provolone cheese, salami, black olives, Parmesan cheese, and fresh parsley.

For the dressing, combine equal parts olive oil, red wine vinegar, and lemon juice with 2 minced garlic cloves. Whisk well. Pour the dressing over the salad and add generous amounts of salt, pepper, and Italian seasoning to taste. Toss everything together until well combined. Serve chilled.
