A fun no-bake treat that tastes like vanilla funfetti cake batter. These truffles are made with Golden Oreos, cream cheese, and Lucky Charms, then topped with white chocolate and crushed marshmallows.
1. To a food processor, add Golden Oreos and process on high speed for about 30 seconds until the cookies become uniform crumbs.
2. Add the cream cheese and process again until fully mixed, about 60 seconds. If needed, use a rubber spatula to break up the cream cheese and get things moving.
3. Add in the Lucky Charms and pulse for another 30 seconds until they’re mixed in.
4. Line a plate with parchment paper. Use a 1-oz. cookie scoop to scoop out a ball of the dough. Use your hands to roll the scoop into a ball, then place it onto the plate. Repeat with the remaining dough.
5. Add the white chocolate to a small microwave-safe bowl. Microwave in 30-second intervals, stirring in between each time, until the chocolate is melted. (If it’s too thick to drizzle, you can stir in 1/2 teaspoon coconut oil.) Drizzle the melted chocolate over the truffles.
6. Add the Lucky Charms marshmallows to a zip-top bag and use a small pot or pan to crush the marshmallows to break them up so that they’re crushed but not completely powdery. Sprinkle a pinch onto each truffle.
7. Place truffles in the freezer for 10-15 minutes until the chocolate has hardened. Enjoy immediately or place truffles into an air-tight container and refrigerate for up to 4 days, or freeze for up to 1 month.
