Had SO much fun cooking with you all tonight. It feels so good to be able to connect with all of you throughout such an uncertain time. Food brings us all together ❤️ Here’s the recipe in case you missed it!
Start by cooking your meat (can omit to make vegetarian)- cook about 1 lb of ground beef or turkey in 1 tbsp avocado oil over medium heat. Add in taco seasoning according to package. Break up well with a wooden spoon.
While that cooks, heat a skillet over medium heat and spray with @chosenfoods avocado oil spray. Once it’s hot, add your tortilla. You can really use any, but I recommend @sietefoods almond flour tortillas. Cook for about a minute on each side or until they get crispy (you will need 2 tortillas per Mexican pizza).
Spread fat free refried black beans evenly over your crispy tortilla then top with your taco meat. Add another tortilla on top, spread evenly with red enchilada sauce (love the one from @traderjoes), sprinkle some Mexican cheese over the sauce and add a small handful of chopped Roma tomatoes. Broil for about 2-3 minutes until cheese is melted and top with fresh green onion, Greek yogurt, and hot sauce 🌶💃🏻
