Mexican Street Corn Pasta

Cook your pasta according to the package. If you’re using @eatbanza pasta, make sure you don’t overcook it otherwise it will get mushy. I used about 2 cups of cooked pasta for this recipe (2 servings). Add 1/2 tbsp @vitalfarms butter and stir until melted. Then add in corn cut fresh off the cob - I just used one cob of corn. It doesn’t need to be cooked beforehand but if you want to, feel free. I personally think it’s better when it’s raw and crunchy. Then stir in 3 tbsp Greek yogurt, juice and zest from one lime, 3 tbsp feta or cotija cheese, 1 tsp salt, pepper and chili powder. Combine well then top with cilantro and some additional chili powder to serve!
