Perfect Stovetop Rice and Easy Skillet Chicken Meal
15 mins prepServes 2
A quick and easy recipe for a complete meal featuring perfectly cooked jasmine rice and tender, seasoned skillet chicken, perfect for a weeknight dinner. This recipe is part of the 'Back to the Basics' series.
For the Stovetop Rice: Bring 2 cups of water to a boil. Rinse rice in a fine mesh strainer and add to the boiling water. Bring to a boil and add in a pinch of salt and the half onion (keep it whole as we will remove it after cooking). Cover, reduce heat to low, and let it simmer for about 20 minutes or until liquid is absorbed. Remove the onion. Add in butter and cover until melted. Fluff with a fork and serve!
For the Easy Skillet Chicken: While the rice simmers, prepare the chicken. Cut the chicken breast in half longways to make it thinner. Cover with plastic wrap and pound until it is equal thickness (I used a cup). Season both sides of the chicken with 1/4 tsp each of kosher salt, pepper, garlic powder, and paprika. Heat a skillet over medium heat. Add a drizzle of avocado oil then add the seasoned chicken. Cook for 2-3 minutes each side until cooked through. Let the chicken rest then slice and serve alongside the fluffy rice!
