Savory Omelette with Cucumber Tomato Salad

Beat two eggs with a little salt and pepper. Cook the beaten eggs in a pan to form an omelette. While the omelette is cooking, prepare the cucumber tomato salad by chopping tomatoes, white onion, and cucumbers, then dressing them in olive oil, lemon juice, salt, pepper, parsley, and mint. Once the omelette is cooked, spread some Bitchin' Sauce and 1/4 avocado inside, along with some of the fresh cucumber tomato salad. Garnish the top with more avocado, Bitchin' Sauce, and salad. Serve with strawberries on the side.
