Smoked BBQ Chicken Sliders

For the chicken: If you have time, brine a 4-5 lb whole chicken (soaking it in salt water). Spatchcock the chicken; you can do this yourself or ask your butcher. Prepare your smoker or oven and heat it to 350 degrees F. In a bowl, mix together the brown sugar, paprika, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, chili powder, and cayenne pepper. Generously coat the chicken with this seasoning mix, ensuring both the front, backside, and underneath the skin are covered. Insert a smart thermometer into the thickest part of the chicken breast. Cook until the internal temperature reaches the desired doneness (the Yummly app will guide you on appropriate timing and temperature). Once finished, remove the chicken from the heat and let it rest. Once rested, shred or slice the chicken for sliders.

For the coleslaw: In a medium bowl, combine the coleslaw mix, mayonnaise, pineapple juice, and apple cider vinegar. Season with salt and pepper to taste, and mix well.

To assemble the sliders: Serve the smoked BBQ chicken on Hawaiian buns with BBQ sauce and the homemade coleslaw.
