Episode 6 is for my veggie queens! 🌱 But honestly, even a meat eater will fall in love with these Sweet Potato Black Bean Burgers. I’ve been making these for 5+ years now and they never get old. They also make the best leftovers! Try them for breakfast with a fried egg on top 🤤 Each patty with cheese has about 12 grams of protein so I usually have 2 per serving (I like to get around 30 grams per meal). For this to truly take 20 minutes, you’ll have to have your sweet potato and quinoa cooked and prepped. I like to do it the night before while I’m cooking dinner this way they have plenty of time to cool (which makes peeling a lot easier). You can microwave the sweet potatoes or boil them! Ingredients for about 6 burgers: 1 1/2 cup steamed sweet potato with skins removed 1 can black beans, drained and rinsed 1/2 cup cooked and cooled quinoa 1/3 cup almond flour or bread crumbs 1 egg 1 green onion, chopped 1 tsp chili powder 1 tsp garlic powder 1 tsp salt 1/2 tsp pepper Avocado oil 3 oz shredded sharp cheddar cheese English muffins or hamburger buns Toppings: shredded lettuce, avocado, tomatoes, pickled onions, mayo, etc. Instructions: Mash black beans with a fork or potato masher. Add in remaining ingredients, combine well then form into patties. Heat a drizzle of avocado oil in a large skillet over medium heat. Cook for about 3 minutes each side until golden brown and crispy. Add the cheese for the last minute, covering with a lid until melted. Serve with desired toppings. #broccyourbody #easyrecipes #traderjoesrecipes #healthyrecipes #20minutemeals
