Tomato & Burrata Salad with Croutons
10 mins prepServes 2
This Tomato & Burrata Salad is the PERFECT spring appetizer, inspired by Flora Farms in Cabo. It's also a great way to use up stale bread by turning it into crispy croutons. Serve as an appetizer, salad, or a fun lunch for two.
For the croutons, heat 2-3 tbsp olive oil in a skillet over medium heat. Rip your stale bread apart into the pan and season with a pinch of kosher salt and garlic powder. Toss until golden brown and crispy.
Assemble the salad as shown in the social media post (typically involves arranging burrata, tomatoes, basil, pesto, balsamic glaze, olive oil, salt & pepper, and the freshly made croutons).
