Anyone else crave Asian food on Sunday nights? Tonight the craving was SO REAL so it’s Trader Joe’s Sunday better-than-takeout edition. This meal takes less than 20 minutes to make and tastes better than a restaurant. I kid you not I ate triple what’s pictured and I don’t feel an ounce of guilt. These chicken lettuce wraps with peanut sauce are full of veggies and lean protein so you can load up people!! 👲🏻 . Step by step in story highlights! Sauté 3 cloves of minced garlic, chopped whole container of Asian Stir Fry Vegetables (I chopped up half at a time) and 1 cup cauliflower rice in a drizzle of @chosenfoods avocado oil in a large pan or wok over medium heat. Add in 1 lb ground lean chicken and season with a dash of pepper and garlic powder. While that cooks, make the peanut sauce! Combine 1 1/2 tbsp peanut butter, 2 minced garlic cloves, 2 tbsp lime juice, a drizzle of honey, 1-2 tsp soy sauce and 1/3 cup water in a small sauce pan. You can add in more water until you get desired consistency. Add in sriracha or sambal if you like spice 🌶 Once chicken is cooked, add in soy sauce or coconut aminos (I did half and half). You may need to drain out excess water beforehand. Serve on top of butter lettuce and top with fresh lime wedges, green onion and peanut sauce. Drool worthy for sure 🤤
